Refined sugar is the sweetener most commonly used in North American and Western European countries, especially in bakery goods and confectionary. Refined sugar consists of any sugar that undergoes a processing step prior to its use in food manufacturing. It differs from other types of sugar in that it does not contain natural enzymes that naturally occur in the sugar. Sugar, which undergoes a refinement process is not only processed to remove its natural enzymes but also its color and taste. It can be brownish or dark brown in color depending on the method which is used to produce it.

White sugar, also known as table sugar or granulated white sugar, is the pure sugar most commonly used in North American and Western European countries, especially in bakery products and confectionery, which has been refined with the help of bone char. This type of sugar can still be further refined using bone char if some sugar refining companies still make it.

Refined white sugar is the least soluble sugar compared to other types of sugar. In fact, white sugar has the lowest level of water and is considered to be one of the least soluble sugars. Because of this property, white sugar is commonly used as sweeteners in food, beverages and desserts.

This kind of sugar is also known for having a high level of sodium content. It is used to sweeten many products including white bread, brownies and ice cream. Some manufacturers add sodium to white sugar in order to keep its taste and its color. They are also added to many foods that have a high salt content like salted popcorn, pasta and baked potatoes.

They are usually sold at a lower cost than refined sugar.
